If anyone's still curious, here's the English translation of flight manual made by Polish manufacturer of An-2. Might contain some insight on aircraft handling. Russian AFM clearly states that "corn duster" CAN do three-point takeoffs. I saw that with my own eyes hundreds times at my local skydiving...
When I flew FS9 a few years ago I always used Vladimir Zhyhulskiy's An-2 (which is freeware and which does not mean that it is bad!). In fact, that 'black roof' is a special non-slippery paint applied for the safety of a mechanic who has to walk over the sloped top of the plane to the refueling caps on the upper wings. On some airplanes it is brownish or grayish rather than pitch black, but almost every An-2 has it.
Thanks for your effort, froggy! Here's how it works in reality. In carburetor there's an aneroid chamber connected to a needle that controls fuel-to-air ratio. Using the manual control lever you can move the whole aneroid/needle assembly effectively leaning the mixture even further, at the same time...

Extensive study, but unfortunately there are only one-sided profile drawings.
Instead of a float version, I would love to have an amphibian version. I have not ever heard about amphibian An-2s. And I know the airplane pretty well. PS: The wheels seen on some photos were used to move the plane around only. You couldn't land on those. Besides, the tailwheel gets in the way of ...
